Apple-Cinnamon Granola

Ingredients

4 cups quick-cooking rolled oats
1 1/4 cups shredded coconut
1 cup finely chopped pecans
1/2 cup sesame seed
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup honey
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 package (8 ounce) dried apples, chopped

Preparation

Combine rolled oats, coconut, pecans, sesame seed, salt and cinnamon. Stir in honey, vegetable oil and vanilla extract; mix thoroughly. Divide mixture into 2 equal parts. Bake one-half of the mixture in a 15 x 10 x 1 inch baking pan at 350° for 20 to 25 minutes, or until golden brown, stirring occasionally. Stir in half of the chopped apples; cool. Stir with a fork until crumbly. Repeat for remaining oats mixture. Store in a tightly covered container in refrigerator.

Yield: 10 cups
