Apple Pancakes
Ingredients
2 cups all-purpose flour
1/3 cup wheat germ
2 1/2 teaspoons baking powder
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups Roberts 2% Milk
1/4 cup honey
2 large eggs, lightly beaten
3 tablespoons vegetable oil
1 Granny Smith apple, cored, peeled and grated
Preparation
Preheat oven to 200 degrees
Heat a griddle or nonstick skillet over medium or medium-high heat. When a drop of water sizzles on the surface, brush with a small amount of vegetable oil or coat lightly with cooking spray. While the griddle is heating, whisk the flour, wheat germ, baking powder, ginger and cinnamon together in a large bowl until blended. In a medium-sized bowl, whisk together the milk, honey, eggs and oil until the honey is dissolved. Stir in the grated apple.
Stir egg mixture into flour mixture just until combined. Pour 1/3 cup of batter onto the hot griddle, spreading to make two to three 5" pancakes. Cook about a minute or until bubbles begin to appear on top of pancakes and bottoms are lightly browned. Flip pancakes over and cook another minute or two until bottom is lightly browned. Transfer pancakes to a baking sheet; keep warm in the 200-degree oven. Repeat with the remaining batter, making a total of 12 pancakes.
