Apple Upside-Down Cake

Ingredients

1/4 cup Roberts Butter
2/3 cup brown sugar
1 teaspoon cinnamon
2 tablespoons chopped walnuts
1 medium apple
2 teaspoons freshly squeezed lemon juice
Spice Cake

Preparation

Melt butter in an 8 x 8 x 2 inch baking pan. Mix together brown sugar and cinnamon; stir in walnuts. Blend brown sugar mixture into melted butter and spread mixture evenly in pan. Wash, quarter, core, pare and slice apple. Arrange apple slices on top of brown sugar mixture; brush with lemon juice; set aside. Prepare 1/2 recipe Spice Cake. Spoon batter over apple slices in pan. Bake at 350รป for 40 to 45 minutes, or until a wooden pick inserted in center tests clean. Loosen cake from sides of pan and immediately invert onto serving plate. Allow pan to remain over cake about 1 minute; remove pan. Serve warm with Whipped Sour Cream.

Yield: 1-8 inch cake layer

Notes:

Use over-ripe bananas in baked goods, as they will give the most flavor.
