Applesauce

Ingredients

8 tart apples
3/4 cup water
1/2 cup sugar
1/4 teaspoon nutmeg dash cinnamon
1 teaspoon grated lemon rind

Preparation

Pare, core and thinly slice apples; place in a saucepan with just enough water to prevent scorching. Bring to a boil, reduce heat to simmer and cook, covered, about 20 minutes, or until apples are soft. Force apples through a food mill or sieve. Stir in sugar, adding more or less to taste. Add spices and lemon rind. Chill, if desired.

Yield: 6 servings
