Beef Enchiladas

Ingredients

1 pound ground beef
1 small onion
1 can enchilada sauce
1 can cream of mushroom
1 can black beans
8 large soft tortilla shells
2 cups shredded cheddar cheese
1/2 cup Roberts Sour Cream

Preparation

Brown ground beef with chopped onion. Add enchilada sauce, cream of mushroom and black beans. Let simmer about 6-8 minutes. Scoop mixture onto a tortilla, add 1/8 cup cheese and roll into enchilada. Place open end down into pan. Continue until all 8 are done. Make sure there is enough mixture to cover the top of the enchiladas. Sprinkle the remaining 1 cup cheese over the enchiladas. Bake at 375 degrees for 15-20 minutes. Serve with sour cream.
