Ingredients

1 cup pancake mix
2 tablespoons cornmeal
1 tablespoon sugar
2/3 cup water
8 frankfurters
oil for frying

Preparation

Combine dry pancake mix, cornmeal and sugar; add water, beating until smooth. With fork or wooden skewer, clip each frankfurter into batter, allowing excess batter to drain off. Deep-fry franks in hot oil (375) until golden brown; drain. Serve hot.

Yield: 4 servings
