Black Bean Sour Cream Dip

2008 Holiday Recipe Contest Entry

Ingredients

1/2 c. Roberts Trim and Lite sour cream
1 c. diced white onion
1 tbsp. finely chopped garlic
2 tbsp. vegetable oil
6 oz. or 1 1/2 c. shredded mozarella cheese from a pkg.
1/2 tsp. ground cumin .
1/2 c. crumbled feta cheese
1 -15 oz. can black beans, drained, and rinsed

Preparation

In a medium frying pan, saute onion , garlic in the oil until onions are soft. Add the black beans and smash them up while you are frying them with the back of the metal spatula. Heat a couple minutes. Remove from heat and add the mozarella cheese, the cumin, and finally the sour cream. Then put this in a small bowl near the chips or vegetables , cut up for dipping. Enjoy!
