Black Bean Sour Cream Dip

Ingredients

1 cup diced white onion
1 tablespoon finely chopped garlic                
2 tablespoons vegetable oil
1 can (15 ounce) black beans, drained and rinsed
1 1/2 cups shredded mozzarella cheese
1/2 teaspoon ground cumin                       
1/2 cup crumbled feta cheese 
1/2 cup Roberts Trim n’ Lite Sour Cream

Preparation

In a medium frying pan, sauté onion, garlic in the oil until onion is soft. Add the black beans and while you are frying them, smash with the back of the metal spatula. Heat a few minutes. Remove from heat and add the mozzarella and feta cheeses, the cumin and finally the sour cream. Put mixture in a small bowl near the chips or vegetables, cut up for dipping. Enjoy!
