Ingredients
2 tablespoons salt
2 quarts (8 cups) boiling water
4 frozen South African rock lobster tails
1 1/2 cups Roberts Butter, melted
1 tablespoon lemon juice
1 tablespoon snipped parsley
1/4 teaspoon hot pepper sauce
Preparation
Add salt to rapidly boiling water. Plunge in lobster tails; cover tightly and return to boiling. Reduce heat and simmer about 15 minutes; drain. With scissors, cut and remove thin under-shell. To prevent tails from curling when broiling, insert a long metal skewer into each, from meat side through tail to shell side, then back through shell and meat at opposite end. Place tails meat side up on a broiler rack. Brush with 1/2 cup melted butter. Broil tails about 3 inches from heat for 2 to 3 minutes. Mix remaining melted butter, lemon juice, parsley and hot pepper sauce together. Serve hot butter sauce with lobster tails.
