Cajun Chicken Pasta

Ingredients

4 ounces linguine pasta
2 boneless skinless chicken breasts, cubed
2 teaspoons Cajun seasoning
2 tablespoons Roberts Butter
1 green pepper, chopped
1 can sliced mushrooms, drained
1 small onion, chopped
2 cups Roberts Whipping Cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
garlic powder to taste
1/8 teaspoon black pepper
grated Parmesan cheese

Preparation

Cook pasta as directed on package. Meanwhile, melt the butter in a large pan. Add the cubed chicken and sprinkle with the Cajun seasoning. Cook until chicken is almost done. Add the green pepper, onion and mushrooms and cook until veggies are tender and the chicken is done. Add the heavy cream and the seasonings and bring to a boil. Remove from heat and add the cooked and drained pasta. Top with cheese if desired. This makes approximately 3 servings, but it's easy to double (or triple) and makes a wonderful dish for company. I like to serve it with a tossed salad and homemade bread. Even though it's a bit spicy, my toddler loves it, too.
