Calcutta Wedge

Ingredients

2 avocados
8 large shrimp
1/2 cup mayonnaise
1/2 teaspoon curry powder
8 ripe olives, sliced

Preparation

Peel avocados; cut in quarters. Arrange shrimp in center of avocado wedge. Blend mayonnaise and curry powder together. Spoon 1 tablespoon of dressing over shrimp. Decorate with sliced olives; serve cold.

Yield: 8 servings
