Candied Walnuts

Ingredients

1 cup brown sugar
1/4 cup light corn syrup
1/3 cup water
1 teaspoon rum extract
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
2-3 cups walnut halves

Preparation

Combine brown sugar, corn syrup and water in a saucepan. Cook over medium heat, stirring constantly, until sugar dissolves and mixture boils. Cook, stirring, to thread stage (234°). Remove from heat; quickly stir in rum extract, salt and spices. Add walnut halves; stir until mixture thickens and nuts are well-coated. Pour onto buttered baking sheet; quickly separate mixture into small clusters using 2 forks. Cool; store in an airtight container.

Yield: 1 pound
