Carrot Bread

Ingredients

3 Roberts Eggs
2 cups sugar
1 cup Roberts Margarine
2 cups grated carrot
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon vanilla extract

Preparation

Cream together eggs, sugar and margarine. Gradually stir in remaining ingredients, mixing until well-blended. Pour mixture into a buttered 9 x 5 x 3 inch loaf pan. Bake at 350° for 1 hour, or until a wooden pick inserted in center tests clean. Cool before slicing. Store in tightly covered container.
