Cheddar Cheese Spread

Ingredients

8 ounces aged sharp Cheddar cheese
8 ounces mild Cheddar cheese
1 clove garlic, crushed
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
dash hot pepper sauce
1/2 cup beer

Preparation

Grate cheeses into mixing bowl and let stand until soft, about 3 hours. Beat until light-colored and smooth. Add garlic, Worcestershire sauce, dry mustard, salt and hot pepper sauce; blend thoroughly. Add beer, 1/4 cup at a time, blending well after each addition, and continue beating until light and fluffy. Garnish with crumbled bacon, stuffed olive slices, cherry tomato slices, crumbled Blue cheese or dill, if desired.

Yield: 2 1/2 cups

Notes:

Covered tightly, Cheddar Cheese Spread will keep for several weeks in a refrigerator. Have some on hand for unexpected guests.
