Cheesecake

Ingredients

2 cups graham cracker crumbs
½ cup Roberts Butter, melted
2 large box lemon Jell-o
2 packages (8 ounces each) cream cheese
1 cup sugar
1 teaspoon vanilla
1 pint Roberts Whipping Cream

Preparation

Crust: Combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9x12 inch cake pan and set aside. Mix 2 cups boiling water with the lemon Jell-o in a small bowl. Stir until dissolved. Put in the fridge to cool. Using a stand or hand mixer, combine the cream cheese, sugar, and vanilla in a bowl until well integrated. In another bowl, whip the whipping cream until fluffy. Add the cream cheese mixture and mix well. Then add the lemon Jell-o mixture and blend well. Pour the mixture onto the crust. Top with a light dusting of more graham crumbs. Cover and refrigerate until set (about 4 hours).
