Ingredients
1 prepared graham cracker pie crust
4 packages (8 ounces each) cream cheese
1 cup sugar
1/4 teaspoon peppermint extract
1 cup Roberts Sour Cream
4 squares baking chocolate, melted
4 eggs
1 cup whipped topping
Preparation
Preheat oven to 325 degrees. In a large bowl, mix cream cheese, sugar and peppermint extract until blended. Mix in sour cream, then the melted chocolate. Add the eggs one at a time mixing each on low speed. Pour this mixture into the prepared pie crust. Bake 40 minutes or until center is set, or almost set. Cool and refrigerate 4 hours. Cut into 16 pieces and put a dollop of whipped topping on each, if desired.
