Cinnamon Apples

Ingredients

8-10 medium apples
2 cups sugar
2 cups light corn syrup
1/3 cup red cinnamon candies
1 cup water
1/2 teaspoon red food coloring
8-10 drops oil of cinnamon or 3/4 teaspoon ground cinnamon

Preparation

Wash apples thoroughly; dry, insert wooden skewers into stem end and set aside. In a medium saucepan, combine sugar, corn syrup, cinnamon candies and water; cook over medium heat, stirring constantly, until sugar and candies dissolve. Do not boil. Add food coloring and cinnamon, stirring well; cook to medium crack stage (295°) without stirring. Immediately remove mixture from heat; quickly dip apples into mixture until well-coated. (It is essential to work rapidly when cinnamon mixture readies correct temperature.) Place coated apples on generously buttered baking sheet, skewer end up, and allow to harden. Store at room temperature.

Yield: 8 to 10 coated apples
