Confetti Cottage Cheese Salad

Ingredients

2 c. Robert's Low Fat Cottage Cheese
1 peeled and grated carrot , food processor is easiest
1/2 washed and seeded and ribs removed yellow pepper
1/2 c. small frozen peas thawed
1 Roma tomato, washed and seeded and chopped fine removing most of the juice
3 washed leaf lettuce leaves, patted dry

Preparation

Wash off all the vegetables. Seed them, if necessary and chop them up if that is necessary. Then in a bowl gently turn all the vegetables into the cottage cheese. Prepare the bed of lettuce and pat it dry and arrange the frilly sides toward the outer edge of the plate. Now scoop out the cottage cheese mix in the middle and fashion it into a large "snow ball" with all the colors and it's ready to serve!
