Confetti Cottage Cheese Salad

Ingredients

2 cups Roberts Low Fat Cottage Cheese
1 carrot, peeled and grated
1/2 yellow pepper, seeded and ribs removed
1/2 cup small frozen peas, thawed
1 Roma tomato, seeded and chopped fine removing most of the juice
3 lettuce leaves, washed and patted dry

Preparation

Wash the vegetables. Seed pepper and chop all in even pieces.  In a bowl, gently fold the vegetables into the cottage cheese. Arrange lettuce with frilly sides toward the outer edge of the plate. Place a scoop of the cottage cheese mix in the middle of the lettuce and fashion it into a large "snow ball.”
