Corned Beef and Cabbage

Ingredients

4-5 pounds Sammy Steer Corned Beef Brisket
1 clove garlic
1 medium onion, quartered
2 whole cloves
10 whole peppercorns
2 bay leaves
1/4 teaspoon mustard seed
2 medium heads cabbage

Preparation

Place corned beef in a large kettle; cover with cold water. Add garlic, onion, cloves, peppercorns, bay leaves and mustard seed. Bring to a boil; reduce heat and simmer 5 minutes. (Skim foam from surface.) Cover; simmer for 3 to 4 hours, or until fork-tender. Cut cabbage into wedges and add to kettle about 20 to 25 minutes before brisket is done. Remove brisket from liquid; slice. Arrange meat and drained cabbage wedges on serving platter.

Yield: 8 to 10 servings
