Cottage Cheese Pancakes

Ingredients

2 cups Roberts 2% Cottage Cheese

8 large eggs
1 cup Roberts Skim Milk
1/4 cup canola oil

1 teaspoon vanilla

1 cup whole wheat flour
 

Preparation

In a blender, combine cottage cheese, eggs, skim milk, oil and vanilla. Blend for a full two minutes. Add flour and blend for another minute. Batter will be very runny. 
Heat one teaspoon of oil in a skillet on medium-low heat. Pour 1/4 cup of the batter onto hot skillet (three or four pancakes at a time). Cook until batter does not appear shiny on the edges, and a few bubbles form in the center. Flip over to cook on other side until lightly browned. Remove from heat and top with favorite flavor of Roberts Yogurt, applesauce, or syrup.
