Cottage Cheese Potato Salad

Ingredients

6 medium red potatoes
3 cups mayonnaise
salt to taste
1 large red onion, thinly sliced
2 cups Roberts Cottage Cheese

Preparation

Simmer potatoes for 45 to 60 minutes, or until tender; drain, peel and slice thin. Spread bottom and side of bowl generously with mayonnaise; add layer of thinly sliced boiled potatoes. Sprinkle with salt. Add a layer of mayonnaise, thinly sliced red onion and cottage cheese; press into mayonnaise. Repeat potato, salt, mayonnaise and onion layers, ending with cottage cheese. Cover and chill at least 12 hours.
