Creamy Pineapple Salad

Ingredients

2 pkg. lemon gelatin (small)
1/2 c. well drained pineapple
1 c. boiling water
1/2 c. chopped almonds
2 c. Robert's Diary Trim and Lite sour cream
Washed lettuce or spinach leaves

Preparation

In a microwave boil water. Add gelatin and dissolve, stirring it as well. Let it cool and as it does, fold in the sour cream. While this is happening wash the greens for the salad and chop the almonds if they are not chopped already. Fold in the drained pineapple as well. Then pour it into a mold and let it set entirely and firmly. When its firm. unmold it on a bed of greens and serve it, but just before serving garnish it with the chopped almonds.
