Ingredients
1 package (3 ounce) lime-flavored gelatin
1 teaspoon salt
1 cup boiling water
2 tablespoons vinegar
dash white pepper
8 medium tomatoes
1 teaspoon grated onion
1 cup drained minced cucumber
1/4 cup mayonnaise
1 cup Roberts Sour Cream
salad greens, optional
Preparation
Dissolve gelatin and salt in boiling water; stir in vinegar and pepper. Chill until slightly thickened. Cut a thin slice from the top of each tomato; remove seeds and pulp and invert cups to drain; chill. Fold grated onion, minced cucumber and mayonnaise into sour cream; add to thickened gelatin. Chill just until firm. Fill tomato cups with gelatin mixture and chill. If desired, serve on salad greens.
Yield: 8 servings
