Cucumber Salad Mold

Ingredients

4 large cucumbers
1 tablespoon unflavored gelatin
1/2 cup cold water
2 cups boiling water
1/4 cup vinegar
2 tablespoons lemon juice
1/4 teaspoon salt
dash cayenne
1 teaspoon grated onion
salad greens, optional

Preparation

Pare cucumbers; cut in half lengthwise. Remove and discard seeds. Grate cucumbers and set aside. Soften gelatin in cold water; stir in boiling water, vinegar, lemon juice, salt and cayenne. Blend in grated cucumber and grated onion. Pour mixture into a 6 cup mold or an 8 x 8 x 2 inch baking dish; chill until firm. Serve on salad greens, if desired.

Yield: 8 servings
