Dieter's Delight Potato Salad

Ingredients

2 tablespoons vinegar
1/4 teaspoon salt
1/4 teaspoon paprika
1 teaspoon capers
2 green onions, chopped
2 tablespoons water
2 cups sliced cooked potatoes
1 cup diced celery
1/2 cup diced green and red sweet pepper
2 Roberts Eggs, hard-cooked and coarsely chopped
1/2 cup Roberts Natural Yogurt
2 tablespoons low-calorie French dressing
salad greens

Preparation

Combine vinegar, salt, paprika, capers, chopped onion and water; pour over potatoes. Chill mixture. Mix in celery, peppers and chopped eggs. Combine yogurt and dressing; stir into potato mixture. Serve on salad greens.

Yield: 6 servings
