Easy Chicken Broth

Ingredients

chicken giblets and neck
1 teaspoon instant minced onion
1/4 teaspoon salt
1 cup chopped carrots
1 cup chopped celery
2 cups water
1 chicken liver
1 chicken bouillon cube

Preparation

Combine giblets, neck, onion, salt, carrots, celery and water. Bring to a boil; reduce heat and simmer, covered, about 2 hours. Add chicken liver and bouillon cube; simmer an additional 15 minutes. Strain broth. Press vegetables through sieve, along with broth.

Yield: 1 cup
