Easy Low-Cal Quiche

Ingredients

1 small package Pepperidge Farm Herbed Crumbs
Roberts Butter for sautéing
3/4 cup chopped green onion
2 cups shredded Swiss cheese
1 cup Roberts Cottage Cheese
3 large eggs
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
sliced mushrooms (as many as you like)
 

Preparation

In skillet, on very low heat, slowly sauté the crumbs in the butter just until crumbs have absorbed the liquid. With back of spoon, push this mixture against the sides of pie plate until an even crust is formed. Spread onions over crust, and then cover with sliced mushrooms. Sprinkle shredded cheese evenly over this. In blender, whirl cottage cheese, eggs and cayenne pepper until smooth. Pour into crust and sprinkle with paprika. Bake at 350 degrees for 20 minutes or until knife inserted just off center comes out clean. Let stand 10 minutes before cutting.
