Enchilada Especial

Ingredients

1 -8 oz. carton of Trim and Lite Robert's Sour Cream
4 flour tortillas
2 c. leftover turkey in small pieces
1 small jar of salsa
1 c. shredded lettuce
1 c. shredded cheddar cheese, from a package

Preparation

In a microwave, heat up the left over turkey , about 5 min. Then heat up the tortillas in a tortilla warmer in the microwave for about 2 min. In the meantime shred the lettuce, and put the cheese in a small bowl. Put a spoon in the salsa. And a bowl out for the shredded lettuce. Let each person make their own enchilada according to their own taste. Normally, they are made with the warm tortilla, then the lettuce is added and then the turkey or meat, and then the cheese and then the salsa and then the sour cream , about 2 tbsp/enchilada or tortilla. It's best to serve the sour cream in a bowl too, so that each person can add as much of the sour cream as they wish and as much as the cheddar cheese too, in a separate bowl with a spoon.
