Ingredients
1 carton (8 ounce) Roberts Trim n’ Lite Sour Cream
4 flour tortillas
2 cups leftover turkey in small pieces
1 small jar of salsa
1 cup shredded lettuce
1 cup packaged shredded cheddar cheese
Preparation
In a microwave, heat up the leftover turkey, about 5 minutes. Then heat up the tortillas in a tortilla warmer in the microwave for about 2 minutes. In the meantime, shred the lettuce and put the cheese in a small bowl. Put a spoon in the salsa and a bowl out for the shredded lettuce. Let each person make their own enchilada according to their own taste. Normally, they are made with the warm tortillas; then the lettuce is added and the turkey or meat, the cheese, salsa and sour cream -- about 2 tablespoons per enchilada or tortilla. It’s best to serve the sour cream and cheese in separate bowls so everyone can take as much as they wish. This is a fun way to serve Mexican food as it allows for individuals to help themselves and enjoy the foods of that culture. A great learning experience!
