Festive Onion Quiche

Ingredients

1 small sweet red pepper , washed, cored and chopped
4 large onions sliced
3 tablespoons Roberts Butter
1 prebaked pie shell
1 cup grated cheddar cheese
3 eggs
1 cup Roberts Milk
1 cup Roberts Cream
1 teaspoon salt
fresh ground pepper to taste

Preparation

Preheat oven to 350. Sauté onions in frying pan then add the chopped red pepper and cook until limp. Arrange on bottom of pie shell. Sprinkle with half the cheese. Mix eggs, milk and cream together. Add salt and pepper. Pour over the onion-red pepper layer in the prebaked pie shell. Bake in the oven for 45 minutes or until puffed and brown. This can be a luncheon dish or appetizer.
