Fresh Strawberry Pie

Ingredients

4 cups fresh strawberries
1/2 cup water
1 teaspoon freshly squeezed lemon juice pinch salt
1 cup sugar
3 tablespoons cornstarch
1-9 inch baked crust
Sweetened Whipped Cream

Preparation

Wash and hull strawberries; cut large berries in half, if desired. In a saucepan, combine water, lemon juice, salt, sugar, cornstarch and half of strawberries; cook over medium heat, stirring constantly, until mixture thickens; set aside to cool. Slice the remaining strawberries; place evenly in baked pie crust. Spoon the cooked strawberry mixture evenly over top; chill thoroughly. Serve with Sweetened Whipped Cream.

Yield: one 9 inch pie
