Fried Fish

Ingredients

1 1/2 pounds fish (cod, halibut or flounder)
1 tablespoon lemon juice
1 1/2 cups flour
1 teaspoon salt
dash pepper
1 teaspoon paprika
1 cup beer
oil for frying

Preparation

Cut fish into 8 pieces; sprinkle with lemon juice. Combine 1 cup flour, salt, pepper, paprika and beer; beat just until smooth. Dredge fish in the remaining flour and dip into batter. Deep-fry 1 or 2 pieces at a time in hot oil (365°) for 5 to 6 minutes, or until golden brown. Allow the oil temperature to return to 365° before adding more fish. Fish may be kept warm in the oven, if necessary.

Yield: 4 to 6 servings
