Ingredients
2 pounds shrimp in shell
2 Roberts Eggs
2 tablespoons Roberts Milk
2 cups cracker crumbs
salt and pepper to taste
oil for frying
Preparation
Peel, devein and clean shrimp. Mix together eggs and milk. In separate bowl, combine cracker crumbs, salt and pepper. Dip shrimp into egg mixture, then into seasoned cracker crumbs. Deep-fry in hot oil until lightly browned; drain on absorbent paper. If a thicker coating is desired, dip crumb-coated shrimp into egg and cracker crumb mixtures a second time before frying. Serve with sauce for Shrimp Cocktail.Yield: 4 servings
