Fruit Filling

Ingredients

1 pound dried pitted apricots, dates, peaches or prunes
1/2 cup water
1/2 cup sugar
1/2 teaspoon vanilla extract, optional
1/4 teaspoon cinnamon, optional

Preparation

Chop fruit; add to saucepan with water and sugar. Cook until thickened, stirring often. Add vanilla extract and cinnamon, if desired.

Yield: about 2 cups

Notes:

Sweetened Whipped Cream is delicious as a filling or frosting for cakes. Keep refrigerated until served.
