Ingredients

2 cups dry pancake mix
1/3 cup sugar
1 Roberts Egg, beaten
1 cup Roberts Milk
2 tablespoons Roberts Butter, melted
1 teaspoon vanilla extract
1/2 cup drained fruit cocktail

Preparation

Combine pancake mix and sugar; add beaten egg, milk, melted butter and vanilla extract, stirring just until mixed. Fold in drained fruit cocktail. Fill buttered muffin cups three-fourths full. Bake at 425° for 15 to 18 minutes, or until nicely browned.

Yield: 1 dozen
