German Green Bean Soup

Ingredients

2 medium potatoes
3 tablespoons minced onion
4 cups fresh green beans or 2 cans (16 ounces each)
2 tablespoons salt
1/2 teaspoon pepper
2 quarts (8 cups) water
1 cup Roberts Sour Cream
2 tablespoons Roberts Butter

Preparation

Dice potatoes; combine potatoes, onion, green beans, salt, pepper and water. (If using canned beans, use liquid from beans to replace part of water.) Simmer about 30 to 40 minutes, or until potatoes are tender. Cool until lukewarm. Stir about 1/4 cup soup into sour cream; return to kettle and add butter. Heat to serving temperature.
