Glorified Rice

Ingredients

1 package (3 ounce) lemon-flavored gelatin
1 cup boiling water
1 cup pineapple juice
2 cups cooked rice, cooled
1 cup drained crushed pineapple
Sweetened Whipped Cream
1/4 cup sugar dash salt

Preparation

Dissolve gelatin in boiling water; add pineapple juice. Chill until partially set; whip to the consistency of whipped cream; fold in rice. Add pineapple, Sweetened Whipped Cream, sugar and salt; fold together gently and chill until firm.
