Gourmet Fish Salad

Ingredients
1 1/2 pounds flounder, salmon or sole fillets
1 cup mayonnaise
1 cup diced tomatoes
1 cup diced celery
1/2 cup sliced green onion
1/2 cup diced artichoke bottoms
1/4 cup finely diced green pepper
1/4 cup finely diced pimento-stuffed olives
salt and pepper to taste
Preparation
Poach fish in salted water about 5 to 7 minutes, or until tender; drain, remove bones and flake. Mix with remaining ingredients, stirring carefully. Chill. Serve on a bed of crisp lettuce. Garnish with cucumber wedges.
