Preparation

Wipe 2 broiler-fryer chickens (2 1/2 pounds each) inside and out to dry; season with salt. Halve 1 medium onion and place in body cavities. Place chickens on a rack in roaster and brush thoroughly with melted butter. Roast at 350° for 1 3/4 to 2 1/4 hours, brushing frequently with melted butter. Discard onion halves before serving.

Yield: 4 to 6 servings
