Grapefruit Ice

Ingredients

2 cups sugar
1 quart (4 cups) water
1 can (16 ounce) grapefruit sections
1/2 cup lemon juice

Preparation

In a saucepan, combine sugar and water; boil 10 minutes; allow to cool. Shred undrained grapefruit by processing in a blender. Add shredded grapefruit and lemon juice to cooled sugar mixture; pour into a 2 quart dish. Freeze until almost firm. Remove from freezer and beat with an electric mixer until mushy. Return to freezer until ready to serve. Serve in chilled individual dessert dishes.
