Gravy Piquant

Ingredients
1 cup brown stock
1 large fresh mushroom, minced
1 tablespoon arrowroot
1 1/2 tablespoons water
3 tablespoons dry white wine
1 1/2 tablespoons vinegar
1 1/4 teaspoons minced shallot or green onion
1 1/2 tablespoons minced sour gherkins
1 tablespoon minced chives
1 tablespoon minced parsley
pinch fresh tarragon
Preparation
Heat brown stock with minced mushroom; bring to a boil, reduce heat and simmer 15 minutes. Dissolve arrowroot in water and gradually stir into liquid; simmer 8 to 10 minutes, or until thickened. Strain and set aside. Cook wine, vinegar and shallot or green onion over high heat until the mixture is reduced to half. Stir in strained brown sauce and bring to a boil. Remove from heat; stir in remaining ingredients. Serve with beef.
Yield: about 1 cup
