Green Pea Soup

Ingredients
8 ounces dried split peas
1 1/4 quarts (5 cups) chicken broth
2 tablespoons Roberts Butter
2 medium onions, finely chopped
1 carrot, chopped
2 stalks celery, chopped
1 teaspoon sugar
1 teaspoon dried mint
1/2 teaspoon salt
pepper to taste
1/2 cup Roberts Whipping Cream

Preparation
Wash peas; place in bowl and cover with cold water. Soak for 8 hours; drain and rinse. Simmer peas in chicken broth about 1 hour, or until peas are tender. Melt butter; saute onion, carrot and celery in butter for 5 minutes; add to soup. Add sugar, mint, salt and pepper and continue cooking for 20 minutes. Puree mixture in blender and strain into a clean saucepan. Add whipping cream and heat 2 minutes, or until cream is hot. Garnish with croutons and serve hot.
