Preparation

Prepare noodles according to directions for Basic Pasta. Reduce 1/4 cup chopped fresh basil, 1/4 cup chopped fresh parsley and 1-2 cloves garlic to a pulp using a mortar and pestle. Gradually add 2/3 cup olive oil, stirring to make a smooth paste. Blend in 1/4 teaspoon nutmeg and 1 cup grated Romano cheese. Toss herb mixture with drained hot cooked noodles until well-coated. Serve immediately.

Yield: 6 to 8 servings
