Hobo Soup

Ingredients

1 pound ground beef
1 cup chopped onion
1 quart (4 cups) water
1 cup cubed potato
1 cup sliced celery
1 can (20 ounce) tomatoes
1 cup sliced carrot
1/3 cup uncooked rice
2 teaspoons salt
pepper

Preparation

Brown ground beef in a heavy kettle; add onion and cook until tender. Add next 6 ingredients and simmer 1 hour. Salt and pepper to taste. Additional leftover vegetables may be added near the end of cooking time.

Yield: 8 to 10 servings
