Homemade Mincemeat

Ingredients

2 pounds lean beef
1 pound suet
4 pounds tart apples, cored
8 strips candied orange peel
8 strips candied lemon peel
4 cups sugar
4 pounds raisins
juice and grated rind of 2 oranges
juice and grated rind of 2 lemons
2 cups grape or other fruit juice
1 tablespoon salt
1 1/4 teaspoons freshly grated nutmeg
1/2 teaspoon mace

Preparation

Cover beef with hot water; cover and cook until quite tender, about 3 hours; cool. Force beef, suet, apples and candied peel through coarse blade of food chopper. Add remaining ingredients and mix thoroughly. Cook slowly for 1 hour. Seal in hot sterilized jars.

Yield: 12 pints
