Lamb Shoulder Roast

Ingredients
3-5 pounds lamb cushion shoulder roast
1 clove garlic
3 1/2 cups Wild Rice Dressing
Preparation
Rub cavity in roast with cut clove of garlic. Fill cavity with Dressing; sew up the edges or lace with skewers and string; place on wire rack in roasting pan. Roast at 325° for 1 1/2 to 2 1/2 hours, or 30 to 35 minutes per pound.
Yield: 8 to 10 servings
