Lemon or Orange Sugar

Ingredients

6 lemons or oranges
1 cup sugar

Preparation

Grate rind of lemons or oranges very fine, avoiding white portion of rind. Mix grated rind and sugar together well. Store tightly covered in refrigerator. Allow to stand 3 to 4 days before using.

Yield: about 1 1/4 cups
