Lyonnaise Rice

Ingredients

1/2 cup chopped onion
1/4 cup diced pimento
1/4 cup diced green pepper
1/4 cup Roberts Butter
3 cups cooked long grain rice
salt to taste

Preparation

Saute onion, pimento and green pepper in butter until golden brown; fold in cooked rice. Cook over low heat until rice is golden, stirring occasionally; season. Serve as an accompaniment to meat dishes.

Yield: 6 servings
