Macaroni and Cheese

Ingredients

4 cups uncooked macaroni or noodles
olive oil
12 ounces grated Cheddar or Gruyere cheese
1/2 cup dry white wine
salt to taste
1 cup herb seasoned croutons, optional

Preparation

Cook macaroni or noodles according to package directions; do not overcook. When tender, pour into a colander to drain. Coat the inside of a medium-size skillet with olive oil and place over low heat. Place grated cheese in skillet and stir until cheese begins to melt. Gradually add white wine, stirring, to make a smooth sauce. Remove from heat as soon as cheese melts and blend into hot macaroni or noodles; season with salt. Pour into a heat-proof serving dish; sprinkle with croutons, if desired. Place dish about 2 inches from broiler and broil 1 to 2 minutes, or until lightly browned. Serve immediately.

Yield: 4 to 6 servings
